Celebrating #BritishScienceWeek with some valuable food science within our Food and Nutrition lessons. Students looked at gelatinisation when making starch based sauces like these roux sauces learning about the swelling of the starch granules during the heating process 🧪 🧫
Food science was demonstrated this week when students whisked eggs alongside sugar to create a stable foam during Swiss roll production. They discussed the trapping of the air when whisking and the manual sifting of the flour which was then folded in 🍓👨🍳 #BritishScienceWeek
🌱 Legumes, pulses and beans may seem similar, but they're not the same! #Legumes are plants whose fruit is enclosed in a pod, and #pulses are the dry seeds inside those pods. #Beans , lentils, chickpeas, and split peas are all pulses!
