One Flew Over the Cuckoo's Nest (1975)
This is one of the greatest scenes ever filmed. The acting, by relative unknowns, is astounding. The edits focus on reaction, which is unusual, and the whole scene sets up the power struggle to come. It's an incredible slice of cinema.
