Ready for bottling of our !! We need healthy yeasts to kick start the second fermentation in bottles & I check them over the week end smelling them & doing viable yeast counts! -JBL

And here we go! Bottling time for as it is now ready for the second fermentation! This specific blend, very classically structured, will be bottled with a little more pressure & yeasts to amplify the autolysis characters ! -JBL

(6/8) With we experienced a new aspect of our Réserve Perpetuelle. As a matter of fact it is so prominent in terms of texture & bouquet that we had to use less than usual: 14% of Réserve Perpetuelle only! -JBL

(5/8) Due to low malic acid levels in the 2023 wines, we have done a historically small 17% of malolactic fermentation in & only of the 2023 wines were fermented in oak to keep as much fruit as possible! -JBL
